Eat Your Beans In Style With Coconut Milk

Beans is a popular delicacy in Nigeria, and it is even more popular among university students.

Whether taken with soaked garri, fried plantain, boiled yam or local bread (agege), it is sure to leave the eater filled up ready to go.

Many chefs have their style of making the legume, as well as our different mummies in the house. And while these different recipes still go down well, Gidifeed brings you one way you can enjoy your beans in style with coconut milk – of course we cannot begin to overemphasize the health benefits of coconut.

Beans (You can use as many cups as desired

Coconut milk

Ground crayfish

Seasoning cubes

Chilli peppers

Fish fillets (some people prefer prawns)

How to prepare

In a pan or pot, place the beans, coconut milk, onions and water. Bring to boil . Add crayfish, seasoning cubes and allow to cook for 30-40 minutes till the beans becomes soft.

Make sure to stir in between cooking time to avoid it burning in the bottom; while at it, season your fish fillets.

When the beans is soft enough, add some oil to a hot pan. Add the seasoned fillets, sliced chilli and garlic, then cook on both sides for 3-4 minutes each till hot in the centre.

Serve the fish over the beans and there you have it! Your Beans with coconut milk.

Try it at home, maybe this weekend and let’s hear your thoughts.

Note: You can serve with rice or fried plantain if desired.
